Courgette Fritters

The perfect recipe to help those people who literally have courgettes coming out of their ears!!! They go perfectly on a bed of bulgur wheat or something similar and a fresh yoghurt dip i.e. Tzatziki

Ingredients

  • 100g Courgettes Grated
  • 100g Plain Flour
  • 1 tsp Baking Powder
  • 2 Eggs
  • 75ml Milk
  • 1 Onion
  • 2 Tbsp Rapeseed Oil
  • 1tsp Smoked Paprika
  • Salt
  • Pepper
  • 1/4 tsp Chilli
  • 1/4 tsp Cayenne
  • 1 tsp Corriander
  • 1tsp Cumin

Method

  1. Mix the flour, baking powder, spices, salt and freshly ground black pepper in a bowl.
  2. Whisk the eggs and milk together in a separate bowl.
  3. Gradually add the egg and milk mixture to the dry ingredients, whisking constantly, to form a smooth batter.
  4. Place the courgettes and onions into a bowl and mix well.
  5. Add some of the batter to the vegetable mixture, enough to bind it together.
  6. Heat the oil in a frying pan over a medium heat. Place a spoonful of the mixture into the pan and cook for 2-3 minutes on each side, or until golden-brown all over. Remove and drain on kitchen paper. Set aside in a warm place and repeat the process until all the fritter mixture is used up
