ManifestoWhat we stand for
Eat well. Live well. Connect.
This is bigger than food. A restaurant feeds someone for an evening. A table can feed a neighbourhood for years.
Food is care: for the soil, the grower, the cook, and the person sitting down to eat.
Everything starts underfoot. Healthy soil grows better food, supports more life, and leaves the next season somewhere to begin.
We follow the seasons. We listen, we adapt, and we let the harvest write the menu.
Local is not a label. It is a relationship with the people who grow, bake, make, repair and create around us. We want our success to travel down the road to the farms, bakeries, makers, artists, tradespeople and independent businesses near us.
We back organic, regenerative and sustainable farming, because the land is not a factory. It is an inheritance. We grow food rather than yield, and how an ingredient was produced matters as much as how it tastes.
If we can make it ourselves, we should. Stocks, sauces, dressings, ferments, pickles, puddings and everything in between. We cook from scratch, with proper ingredients and human hands. Food should not need a mystery attached to it.
A long shelf life is not the same as a good life. We choose food that remembers where it came from and leaves its ingredients recognisable.
Our menu is climate action you can eat: more plants, better farming, shorter journeys, less waste, and no empty green promises.
Waste is a failure of imagination. We use the whole ingredient, preserve the glut, reimagine the trim, buy carefully, and compost what is left.
Good food should nourish people without exhausting the planet that provides it.
The tableAnd who is at it
A table is good for the head as well as the body. A warm welcome, decent food and an unhurried conversation will not fix everything, but they can make a day less lonely.
We eat together. We pass the bread, share the plates, learn each other’s names and make room. Communal eating reminds us we belong to something larger than ourselves. Community is not our audience. Community is what happens between us.
We use social media to spread good ideas, celebrate local people and invite people in, not to manufacture a life that does not exist. Phones down, heads up. No app replaces eye contact, laughter, listening, or the awkwardness of actually being there.
We will tell the truth about our food: where it came from, who produced it, and why we chose it. We will name the people behind every ingredient rather than pretend food appears at the kitchen door.
Real food should not feel like a private club. We will keep finding ways to welcome more people, across ages, incomes, backgrounds and appetites.
We will look after the people who look after everyone else. Good food does not come from burnt-out people. Rest, respect, fair opportunity, kindness and asking for help are part of the recipe. We want a place where people can learn, grow, speak honestly and be proud of what they have made.
We will not chase perfection. We will choose presence, honesty and accountability. We will measure what matters, admit what is not working, share what we learn, and keep going.
The promiseTen of them
- We will buy close.
- Follow the season.
- Back good farming.
- Cook from scratch.
- Waste less.
- Feed people well.
- Make room.
- Put our phones away.
- Look after the team.
- Leave things better than we found them.
Come hungry, leave nourished, go home more connected.
Not finishedOn purpose
This is a work in progress.
It should not belong to one person. It should be a shared promise that future directors and team members agree to keep, and it needs the community and the new directors to finish it.
