Warm Soft Chocolate Fondant

This recipe was kindly donated by Andrew Luck, a Welsh chef with experience in the Gordon Ramsey empire. Andrew understands the importance of local and seasonal produce and as a chef demands the best ingredients from his suppliers. Here are a few words from Andrew: “This recipe has followed me throughout my career and still to this day I have great pleasure in watching customers and my staff cut into this indulgent cake as it oozes out warm chocolate sauce. A great recipe for Christmas if you feel like a change from Christmas Pudding, I hope you enjoy.”

Ingredients

  • For dusting Cocoa
  • For ramekins Butter
  • 250g 70% Fairtrade Dark Choc
  • 250g Butter
  • 5 Eggs
  • 250g Plain Flour
  • 5 Egg yolks
  • 300g Fairtrade caster sugar

Method

  1. Butter ramekins and dust with cocoa powder to prevent sticking.
  2. Melt butter and chocolate until melted.
  3. Mix sugar and eggs together, being careful NOT to over whisk.
  4. Fold chocolate mixture into eggs
  5. Add flour to the mix and fold until fully incorporated.
  6. Pour mixture into ramekins leaving 1cm from the rim.
  7. Cook at 190 celsius for 10 minutes (DO NOT OVERCOOK)
  8. Leave to rest for one minute then overturn and serve with ice cream or creme fraiche
