Wild Garlic, Nettle and Leek Hummus

A great twist on the traditional hummus using Wild Garlic, Local Organic Leeks, Nettles and Welsh Rapeseed Oil. As seen on “You Tube”!

Ingredients

  • 500g Chickpeas
  • 1 Big Leek Leeks
  • Handful Wild Garlic
  • Handful Nettles
  • 150ml Rapeseed Oil
  • Pinch Salt
  • 5g Fresh Pepper
  • 10g Cumin
  • 10g Corriander
  • 100ml Water
  • 1 Clove Garlic
  • 2 Tbsp Tahini
  • Squeeze Lemon
  • 1/2 Tsp Cayenne Pepper

Method

  1. Heat a pan with some Rapeseed Oil
  2. Clean your Leek and chop, add to the pan with a pinch of salt, followed by your Nettles & Wild Garlic (Make sure these are washed too)
  3. Grind up your spices to a fine powder
  4. Add Chickpeas to the blender with your water and oil & give a good blitz
  5. Now add the fresh Garlic, Spices, Lemon, Tahini & Cayenne
  6. One final blitz, then add the Leeks, Wild Garlic and Nettles over the top.
