Ingredients

  • 1 cinnamon stick
  • 6 cardamom pods
  • 1 star anise
  • 1/2 tsp nutmeg
  • 6 whole cloves
  • 1 inch fresh ginger root
  • 1 tsp whole black peppercorns
  • 3 black tea bags
  • 2 Tbsp brown sugar
  • Milk

Method

  1. Lightly crack the cardamom and finely slice the ginger then place all the spices into a pan with 750ml water and bring to a boil. Cover, reduce heat and simmer for 5 minutes.
  2. Remove from heat and set aside to let steep for 10 minutes.
  3. Put the pot back on the heat and bring to a boil, add the tea, set aside, cover and leave to steep for 3 to 5 minutes.
  4. Strain through a sieve into a jug, discarding solids.
  5. Now you have the Chai concentrate, this is to be used with equal quantities of a milk depending on how many people you are making it for, add sweetness to taste.
