Goan Chickpea Curry

Ingredients

  • 2 onions
  • 1 lime (juice & rind)
  • 1/2 lemon (juice)
  • 50g coriander
  • stick lemongrass
  • 2 cloves garlic
  • 1/2 thumb ginger
  • 1 red chilli (mild)
  • 200g creamed coconut
  • 1/2 teaspoon madras powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon sugar
  • 1 cauliflower (small)
  • 1 can cooked chickpeas

Method

  1. Firstly, dice your onions and get them frying off in a pan until golden and soft.
  2. Add all the dry spices and cook off for a minute.
  3. Then add your lemongrass, sugar, lemon juice and zest, chopped garlic, chopped ginger & chilli.
  4. Add 200 ml water and add chopped cauliflower and chickpeas into the mixture. Put a lid on and let the cauliflower cook through. Approx 10 mins.
  5. Add the coconut cream, stir through and cook for another minute or two.
  6. Season to taste.
