Everyone whose work is on the table.
None of this is ours. It is grown, brewed, pressed and made by people working on a small scale, mostly the hard way, and the least we can do is say who they are. Here is where tonight came from.
The wineThrough Les Caves de Pyrène
Our wines are supplied by Les Caves de Pyrène, champions of small, independent winemakers producing wines with character and a real sense of place. They focus on natural, organic and low-intervention wines, made with respect for the land, the environment and the people behind each bottle.

Red
Cantina Frentana Rosso IGT
Organic house red from a cooperative of small family growers in Abruzzo. It is juicy and soft, with loads of plum and cherry and a little spice.

Il Ciù Ciù Bianco
Organic house white from a family winery in the Marche in Italy. It is Trebbiano, really fresh and crisp, with lemon, apple and pear. Very easy drinking.

Fizz
Pago de Tharsys Cava Brut Nature
Organic Cava from a small producer near Valencia. Really dry and crisp, with fine bubbles, green apple and citrus, then a little biscuity character from ageing in bottle.

Sweet
Chez Jau Muscat de Rivesaltes 2023
Muscat grown on the foothills of the Corbières, in southern France, picked ripe and pressed, then fermented.

The beerMantle Brewery, Cardigan
Every ale on the bar tonight was brewed about thirty miles up the road at Mantle Brewery on the Pentood estate in Cardigan, and delivered by the people who brewed it.

Rock Steady 3.8%
A golden session ale with a great depth of flavour.

Moho 4.3%
A robust and aromatic Welsh pale ale, finely balanced.

Hood-Winked 5.0%
A crisp, refreshing German-hopped lager style beer that is top fermented.

Dark Heart 5.2%
A rich, dark and smooth porter with a hint of spice.
The cider
Gethin's Cyder, 6%, made in Pembrokeshire and stocked by Mantle, who put us on to it.
Nothing to drive home aboutAlcohol free
Drop Bear Beer Co in Llansamlet, Swansea, is the first alcohol-free brewery in Wales, started in 2019 by Joelle Drummond and Sarah McNena. Their beer is 0.5%, vegan and gluten free. Tonight it is the Yuzu Pale Ale and the New England IPA.
Blighty Booch is organic kombucha, brewed in small batches by a family in Conwy since 2018. Raw, unpasteurised and properly sour.
Tap water is free all night, and you never have to ask nicely for it.
The kitchenWhere dinner came from
The venison is from the Tywi valley, which is the river this town sits on.
The cheese is Caws Teifi, made at Glynhynod Farm near Llandysul from unpasteurised Welsh milk. They have been at it since 1982, which makes them the longest-standing artisan cheesemaker in Wales. Tonight it is their traditional Welsh Caerphilly, and Deri bought the whole wheel.
Dry goods and the rest come through Castell Howell at Cross Hands, a few miles up the A48 and family-run since 1988.
Buying like this costs more per bottle and it is most of the point. Ten years of it is what tonight is for, and the plan for what The Warren becomes next is built on the same idea.
